MSA Class Get A Taste Of Christmas Cookies

Learning more about the many holiday traditions that exist on the island, some students from Mount Saint Agnes Academy recently took part in making biscoitos [biscuits], a Portuguese tradition at Christmas and Easter time.

The dough was prepared and delivered to the class where the children did all of the rolling and a parent volunteer baked the cookies over in St. Theresa’s hall. In less than an hour, seven pounds of dough was rolled and made into cookies which usually takes one person close to three hours on their own.

The children decided to share the biscoitos with the principal, vice principal and Father Paul Voisin and Father Julio Blazejewski, who generously allowed the use of the oven. Each child took a bag of biscoitos home along with the recipe which is a family recipe handed down over the years.

Biscoitos Recipe:

  • Ingredients: 5 lbs. flour, 1 dozen eggs, 1 lb. butter, melted, 5 tbsp. Baking Powder, 4 cups sugar, 1 cup milk, 1 tsp. lemon essence and 1 tbsp. salt
  • Melt butter, beat eggs, sugar with a mixer til well beaten. Add lemon essence
  • Heat milk in a large pot ‘til warm, not boiling. Remove from heat. Stir in baking powder
  • Put flour in an extra large bowl. Add all wet ingredients and mix well
  • Allow to stand for 10 minutes. Knead and allow to stand at least half an hour
  • Heat oven 350 degrees
  • Roll dough into thin ropes and attach ends to form small circles. Place on an ungreased cookie sheet and bake 10-15 minutes or until golden brown
  • Icing: Boil 1 cup water, 2 cups sugar and 1 capful of clear vanilla essence [food coloring may be added] until it makes a thin thread when poured from a spoon. Pour over baked cookies, toss gently
