What does his country of origin have to do with it? As a foodie, I can attest that Marcus’s expertise is well-known. He is an excellent chef, by any measure. It does not take “courage” on the Greens’ part to recognize that somebody has skill. I live in New York, and it is hard to get a table at his restaurant in Harlem (which I highly recommend). I cannot wait for his new restaurant to open in Bermuda. I don’t think Bermuda has ever courted a chef of his international caliber. The Cayman Islands has Eric Ripert at the Ritz-Carlton. Marcus is not Eric Ripert (yet), but he’s not too far behind, and he has time on his side.

Quite refreshing to see an African brother running a successful operation in Bermuda. Also happy to see the Green family having the courage to bring his type of quality to these shores. Hotel is shaping up well! Next step is for Hamilton Princess to promote from a long line of successful Bermudian hoteliers to the post of general manager. Elbow Beach, Coco Reef and Southampton Princess soon to follow?
