Samuelsson At HP Restaurant To Open June 3

On June 3, 2014, acclaimed chef Marcus Samuelsson will open a two month pop-up restaurant, Samuelsson at HP at the Fairmont Hamilton Princess hotel. The pop-up is a preview of the new signature restaurant set to open at the hotel in May 2015.

A spokesperson said, “Chef Samuelsson has crafted a vibrant menu that celebrates Bermudian culture and history, and will be executed by chef de cuisine Leo Marino from Samuelsson’s acclaimed Red Rooster Harlem in New York City.”

“I’m excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda,” said Chef Marcus Samuelsson. “From fresh-caught local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table. We’ve received a warm welcome from our colleagues in Bermuda, and we look forward to becoming part of the community.”

“In addition to the wealth of local ingredients, Samuelsson at HP has been able to leverage local culinary talent to bring Samuelsson at HP to life. Five students from the culinary program at Bermuda College will hone their skills at the pop-up.”

Rum Cake with Strawberry Salad

“Developing local talent is something that we do at all of our restaurants,” explained Nils Noren, vice president of restaurant operations at the Marcus Samuelsson Group. “The opportunity to secure culinary staff from Bermuda College created a wonderful opportunity for us, and also for the students.

“They will bring a wonderful local dimension to the kitchen, and at the end of the run of the pop-up, we’ll take the top student to New York for a week-long externship at Red Rooster Harlem. We hope that this experience is one of the most influential of the education.”

“The menu at Samuelsson at HP will offer dishes in Chef Samuelsson’s signature, internationally influenced cooking style. Dishes will highlight fresh seafood and local flavors to emphasize the restaurant’s warm, seaside location and the culture of Bermuda.

“There will be several raw options, like Rockfish Ceviche with pickled cherry tomato, radishes and jalapeño oil, and small plate appetizers like Fish Chowder Croquettes with rum aioli, and Trout Roe Tacos with wasabi, red onion and corn tortilla. Large plates will include Grilled Head on Shrimp with ginger-scallion sauce, sweet soy, and cilantro, and Mustard-Crusted Lamb Rack with red wine and coffee-caramelized pearl onions.”

“Desserts take on an island theme, with offerings like Rum Cake with strawberry and ginger salad, Dark and Stormy Sorbet, and Banana Bread Pudding Parfait with passion fruit gel and chocolate.

“The pop-up restaurant’s bar menu will feature bespoke warm weather cocktails, from large, shareable pitchers of Rum Rum Punch with white rum, dark rum, coconut water, pineapple juice, lime, and nutmeg, to the M City Grapefruit with tequila, grapefruit, mint, and salt.

“The pop-up features a 48-seat indoor dining room in addition to expansive outdoor seating for up to 60 additional guests with a bar, dining area, and lounge terrace. Handcrafted design elements will showcase geometric patterned pillows and flooring, nautical elements, Scandinavian-inspired wood furniture and subtle, yet bright pops of color.

      It’s amazing that even when something is truly a positive improvement to the offerings on this island there’ll be someone out there that finds even the most remote and completely irrelevant detail to complain about.

    This is a boon for Bermuda and I am sure it will be successful. Marcus Samuelsson is an incredible chef – we’ve been to Red Rooster in NY. It’s amazing.

    We went to the 1609 restaurant having been told by some friends it was the Marcus S. one but it certainly isn’t – service was quite poor and the quality of the food was not very good either. Rather disappointing actually. We had hight hopes for a great experience. Perhaps they are just getting used to being open and will get better as time goes by.

      Also went to 1609 the other night – MUSIC IS WAAAAY TOO LOUD! I want to like it, I really do, but you can’t have a conversation, let alone hear the specials, ask for drinks, order dessert…help me to help you….. TURN IT DOWN and I might return with my wallet. (And for reference, I’m not some grumpy old dude, I’m 32.)

      What else do you expect to pay when you eat at a hotel?
      Last I checked nobody ate at a hotel for their affordable prices.
