Trott To Train At Samuelsson’s NY Restaurants
The Fairmont Hamilton Princess today announced that Bermudian culinary student Shayne Trott will travel to New York City for a one-week externship in two of internationally-acclaimed chef Marcus Samuelsson’s restaurants.
The externship will take place from March 2 to March 6, where Mr Trott will visit Red Rooster Harlem and the new Streetbird Rotisserie, to open this spring also in Harlem.
He will have the opportunity to shadow chefs, observe how a busy Manhattan kitchen is run and experience opening a restaurant in New York – Streetbird Rotisserie.
Mr Trott says: “I am very excited to have been chosen to travel to New York and work at Red Rooster Harlem and Streetbird Rotisserie. Working at Samuelsson at HP last summer was very challenging, but I came out of it wanting to be a chef even more.
“I learned so much from the team and look forward to furthering my experience in New York.”
Mr Trott worked as a cook at Samuelsson at HP over the summer and was selected out of five students to complete the externship.
The pop-up restaurant was open from June 3 to August 3, 2014 at The Fairmont Hamilton Princess and served as a preview of Chef Samuelsson’s new signature restaurant opening at the hotel in May 2015. Chef Samuelsson created a vibrant menu that celebrated Bermudian culture and history.
Chef Leonardo Marino, chef of Red Rooster Harlem and the new signature restaurant in Bermuda, comments: “We had a great experience working with the five culinary students from the Bermuda College over the summer at Samuelsson at HP. They were all excellent student chefs. We hope this externship will be a fun and rewarding learning experience for Shayne.”
Mr Trott will graduate this May from Bermuda College with a degree in Culinary Arts.
The new Samuelsson restaurant is part of phase two of the iconic hotel’s $90 million renovation and restoration project. It will also include major renovation of the Gazebo wing guestrooms, remodeling of the central courtyard and a facelift to The Heritage Court.
Award-winning chef and cookbook author Marcus Samuelsson was the youngest chef to ever receive two three-star ratings from The New York Times while at Aquavit as Executive Chef. In 2010 he was the winner of Top Chef Masters Season 2 and also served as the guest chef for the first State Dinner of the Obama administration.
