Photos: Roof Wetting For Marcus Restaurant
Following a traditional roof wetting ceremony last night [May 26] attended by the Green family and Premier Michael Dunkley, the Hamilton Princess & Beach Club‘s new signature restaurant Marcus’ will officially open for dinner this evening.
Managed by acclaimed chef Marcus Samuelsson, the restaurant features a vibrant menu hand crafted by Chef Marcus Samuelsson that celebrates Bermudian culture and is executed by Executive Chef Leonardo Marino, hailing from Samuelsson’s acclaimed Red Rooster Harlem in New York City and Samuelsson at HP.
The menu offers dishes such as cornbread madelines, Leonardo’s pasta del giorno, blackened rock fish and grits, grilled Bermuda onion, the catch of the day, and much more.

The menu includes grilled options from the wood-burning grill as well as a raw menu and eclectic dishes such as Fish Chowder Bites; Fried Chicken and Waffles; and Lobster Cocktail with Warm Cheese Puffs.
Decadent desserts include Sweet Potato Donuts, and Warm Chocolate Cake with Grilled Pineapple and Ginger Ice Cream. Local ingredients will be sourced where possible, including vegetables from Wadson’s Farm and fresh-caught local fish.

In the kitchen…
I find this very disrespectful to not have the Main Man here Marcus Samuelsson, to do the roof wetting with out him is just crazy. Shows how much they care for an respect him they just want there money all of them.
