Samuelsson Launches New Menu At Princess

Following a visit to Bermuda earlier this month, chef Marcus Samuelsson has launched a new menu for the Marcus’ restaurant at Hamilton Princess & Beach Club.

Working with the Marcus’ Chef de Cuisine, Danai Hongwanishkul, and his team, Marcus has created new dishes that deliver island flavours with Southwestern, Soul and Portuguese twists. Marcus has recently release a new cookbook, The Red Rooster Cookbook: The Story of Food and Hustle in Harlem, which has also inspired the menu.

The new menu features dishes such as Sunday Breakfast, a Salt Cod Croquette with Poached Wadson Egg, Avocado and Plantain, and Back of Town Jerk Pork Belly, which is served on Coco Bao with Gombey Pepper Jam Aioli and Funky Apple.

It also includes several new vegetarian offerings, such as Crispy Buttermilk Cauliflower with BBQ Sauce and Sesame Mayo and Curly Kale Pesto Pasta, bringing the vegetarian options up to nine for the dinner service – not including sides.

Marcus Samuelsson said: “I am so excited to have launched a new menu at Marcus’. The flavours and ingredients we have used are all inspired by Bermuda, its produce and its people – with a Harlem twist!

“There’s something for everybody to enjoy on the menu and with the restaurant’s spectacular view over the harbour, it’s a guaranteed entertaining night out.”

Many of the restaurant’s most popular dishes, including the Beyond Burger, Fish Chowder Bites and the Fried Yard Bird, are still on the menu.
