Gary Cook Joins Rosewood As Executive Chef

With nearly 30 years of experience working in the luxury restaurant and hospitality industry, Gary Cook has joined Rosewood Bermuda as Executive Chef.

A spokesperson said, “Chef Gary will guide the team at Rosewood Bermuda to deliver convivial culinary concepts for the resort’s signature restaurant, Island Brasserie, as well as The Beach Club and Sul Verde.

“Chef Gary has worked across the UK and Bermuda with luxury hotels as well as French, Italian and fusion steakhouse restaurants, learning the ins and outs of different cuisines and cultures.

“After 30 years in the industry, Chef Gary’s career is now coming full circle as he returns to the island of Bermuda where his profession took off back in 1991 as the Sous Chef of Bermuda’s Waterloo House. Three years following, Chef Gary went on to become the executive Sous Chef of Fourways Inn in Bermuda before moving to his hometown of Newcastle in 1998 to lead several popular restaurants.”

“I am delighted to join the culinary team at Rosewood Bermuda,” said Chef Gary. “When I touched down in Bermuda, I felt right at home, like I never left. I’m honored to be able to return and look forward to bringing my expertise to the team as we work to develop unique food concepts that will enhance the culinary landscape on the island.”

The spokesperson said, “With a team-first mentality, Chef Gary is leading the Rosewood Bermuda culinary team with hopes to make a difference on the island by working with local suppliers and farmers to showcase the authenticity behind Bermudian food. Chef Gary also plans to utilize the diversity on his staff to showcase all the teams’ talent, not just his own.

“Upon joining the team, Chef Gary added his staff’s recipes to menus with their respective names on the dish to help promote and provide credibility to their talents, all in efforts to boost morale, teamwork and confidence within the team. A very optimistic leader, Chef Gary believes that the happiness of the customer starts with the Chef and is translated through the rest of the kitchen staff, to the dishes they prepare, all the way to the guest experience – and that is what Chef Gary is striving to achieve at Rosewood Bermuda.”

The spokesperson said, “Rosewood Bermuda’s restaurants are among the finest dining options in Bermuda and Chef Gary plans to further define all three of them to better appeal to guests and locals alike. The resort’s signature restaurant, Island Brasserie, will become a traditional NYC steakhouse; The Beach Club will showcase a beautiful selection of Bermuda’s fresh fish with a new Asian and Latino flare; and Sul Verde, will be defined as more of an authentic Italian restaurant on the island.”
