Celebrity Chef To Create New Hotel Restaurant

Marcus SamuelssonThe Green family today announced that internationally acclaimed celebrity chef Marcus Samuelsson will create The Fairmont Hamilton Princess’ new signature restaurant overlooking the harbour, which is set to open in May 2015.

Chef Samuelsson [pictured left] is an Ethiopian-born, Swedish-raised chef and restaurateur who opened New York City restaurant Red Rooster Harlem and its sister speakeasy and jazz lounge Ginny’s Supper Club.

As an award-winning chef and cookbook author, Chef Samuelsson is at the forefront of the international culinary scene. He was the youngest chef to ever receive two three-star ratings from The New York Times and also served as the guest chef for the first State Dinner of the Obama administration.

In 2010, Chef Samuelsson was the season two winner of the popular American reality competition series, Top Chef Masters. In addition, after appearing consistently as a judge on the Food Network show Chopped, Chef Samuelsson competed in and won Chopped All Stars: Judges Remix. In 2014, he made his debut as a mentor on the second season of the American television series The Taste.

Alexander Green, on behalf of the Green family, said, “We are thrilled to have such an accomplished and talented chef leading our new signature restaurant. As creator of one of New York City’s hottest eateries, we look forward to Chef Samuelsson bringing to Bermuda both his passion for food and his culinary expertise to create a restaurant unlike any that this island has had before.”

Along with his many culinary achievements, Chef Samuelsson won the James Beard Foundation award for Writing and Literature related to food for his New York Times Bestseller, Yes, Chef: A Memoir, which chronicles his journey from his grandmother’s kitchen to becoming a world-class chef. He also is an active philanthropist who supports a variety of causes.

Andrew Green, on behalf of the Green family, said, “To have Chef Samuelsson join us in bringing to life our vision for the signature restaurant is truly an honour. We are very excited to introduce the Chef and his exceptional and unique cuisine to Bermuda. As plans for the new restaurant unfold, we look forward to sharing those details.”

“I’m excited to create new flavours inspired by the rich, vibrant culture and history of Bermuda,” said Chef Marcus Samuelsson. “From fresh-caught, local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table.”

To give people in Bermuda a taste of what’s in store for the new signature restaurant from Chef Samuelsson, the Green Family will be opening a pop-up version of the restaurant for two months this summer.

Also in honour of the new partnership between the Green Family and Chef Samuelsson, The Fairmont Hamilton Princess will be flying the Ethiopian and Swedish flags on the property’s iconic flagpole terrace.

                Is that a trick question? The beginning came out of Ethiopia and went throughout Africa and the rest of the world, early maps indicate that the continent we know as Africa was called Ethiopia
                (Cush) and the Atlantic Ocean was called Ethiopian Ocean.

  11. This is good news, a chef with large following. Pop up restaurant in summer will give good indication of what is in store. Hopefully, cuisine is mainly Bermudian, adding his background, it should be interesting and good.

      Gordon Ramsay ? HA ! That’ll be the day .
      I hardly think there’s too many Bermudians who could put up with the way Ramsay talks to people when you consider they get all bent out of shape and talk about civil unrest over a woman on a balcony telling a crowd of union marchers that they should be glad to have a job and go back to work .

      For his unusual method of encouraging the highest standards Ramsay would be marched to the airport and off a burning island within a week.

      We don’t have any chefs that have done the things that he has.

      Which is not to say we don’t have good chefs here. We simply do not have anyone at this guy’s level.

        No Mr Hind, they are paying for his exceptional culinary skills on which his reputation has been built.

        Unfortunately today these super talented chefs have diverse and wide ranging business interests in the world of haute cuisine, cooking book deals and restaurant ownership. So, it is most likely that he will employ an executive chef and all chefs to create, prepare, manage and serve the very high quality food. Unfortunate – because Chef Samuelesson may only be in Bermuda for the opening of his restaurant then he will concentrate on building his empire rather than one restaurant in Bermuda.

        If the Greens could convince him to live in Bermuda for the next 5 years and take some aspiring Bermudian chefs under his direct supervisor to mentor, then he would qualify as my commercial immigrant example. Chef Samuelesson represents a unique niche market of excellence and his skills as a world renown chef raises the bar for Bermudians seeking to make their names internationally.

            This super chef honed and perfected his culinary skills FIRST, and that is what his reputation is built on…

            His experience could mean anything from management of chefs to writing books, but it’s his culinary skills that he built his reputation on, and you did not mention that, and that I am referring to.

      Norf, it’s likely that Chef Samuelsson will design the restaurants physical structure, create menus and train a staff of chefs to carry out his vision. That’s what celebrity chefs do! He most likely won’t be there very often…..that’s what celeb chefs do too…….

      Where was Chris when TEN BERMUDIANS were let go from Coral Beach? Chris Furbert only supports those who pay BIU membership not ALL BERMUDIANS. Bermudians shouldn’t rely on Mr. Furbert instead they should print out the Bermuda Employment Act read it fully & keep it at hand. With OBA’s quest for globalisation of Bermuda no Bermudian’s job is safe & we all need to be prepared to stand up for our rights. There should still be an opportunity for the Bermudian Chefs you mentioned since Marcus Samuelsson restaurant will need them but it will probably come to the decision of the GM who is the one that decided on making workers redundant not the Greens.

    Ok I like the celebrity chef and I watch him on Chopped quite a bit!

    My issue with this is that two weeks ago Hamilton Princess made 10 staff members redundant. The BIU had to come to the rescue of the staff members to save their jobs….Fast forward to today and Hamilton Princess are hiring a celebrity chef for approx $500K to create a menu for a restaurant………..

    Where is the logic………….

      I think, and I stand to be corrected, the logic is that this guy – because of his celebrity, fame and food – will bring in a lot more money for the hotel and restaurant, thus is worth the money.

      It’s an investment and has nothing to do with whether they need (or don’t need) to make other staff redundant.

      The intention is that the money spent on this will generate more revenue.
      Employees wages are a different thing.

        YOUR FRONT-LINE STAFF IS WHAT WILL SUSTAIN OR DEMOLISH THE BUSINESS. Whenever I go to a restaurant, I will return if the waitstaff is as good as the food. Back in the day, we loved our local waiters offering quick service and joviality to the meal. That was indicative of their love for their job.

        The total experience is what most customers want – the surrounding atmosphere provided by the staff, not just the physical plant, or the food.

        Managers, who is paying attention to the development of excellent FRONT-LINE STAFF?

      The difference is The Greens are running this show not Fairmont. Do not confuse the two. The Greens own the property. The hotel brand just complies to the changes else look forward to another brand coming forward to replace them. Do not be surprised over the next 5 years that it will be major hotel brands in a bidding war to operate Hamilton Princess.

      BIU came to the rescue of their own members not all the staff members. The decision to let go staff was the GM’s & the decision to hire Marcus Samuelsson was the Greens. What needs to be scrutinised is the GM’s decisions as he will now have to decide who is hired to work the coming restaurant. Here is a job opportunity for Bermudians but we will have to wait to see what the GM thinks.

      There’s no way to compare as the investments differ greatly. A better comparison would be the GM to this celebrity chef as the investment is more the same. Maybe the Greens need to look at a better ROI on their GM. Surely Fairmont has many in line waiting for the chance in paradise.
