Chiko & T’s Win Lionfish Chowder Competition
Chiko & T’s, the winners of the Eat’Um to Beat’Um Lionfish Chowder Competition, have revealed some of the secrets to their success, saying they kept the chowder “old fashioned and traditional” and ”only used fresh ingredients.”
Held at the Bermuda Zoological Society [BZS] last week, Chiko & T’s beat out competition from local restaurants such as The Cloud at the Waterfront, The Spot Restaurant Group [IRG], The Loren, Wahoo’s Bistro and Patio, Rustico, Take Five Ltd, Docksider’s, Rosewood Tuckers Point, Cambridge Beaches and Swizzle Inn.

The event was organised by the BZS with the support of Gosling’s, Outerbridge’s Sherry Pepper Sauce and Butterfield and Vallis, and was launched to help expose the public to the use of lionfish as an ingredient in the island’s iconic food.
Chiko & T’s won the Judge’s Choice and People’s Choice awards.
Michiko Campbell, who runs Chiko & T’s Restaurant/Catering with Dr Teneika Eve at the Devonshire Recreation Club, told Bernews: “I knew we had a good product and thought we would be very competitive.
“We kept [the chowder] old fashioned and traditional. We didn’t add rockfish or anything like that. We wanted to see what we could capture from the lionfish flavour.
“It doesn’t make sense to change something that works. We only used fresh ingredients. We were going for the win and were confident in our product.”
Chiko & T’s opened in May last year and pride their food on being “fresh, tasty and local”.
Mr Campbell, who has worked in the food industry for 18 years, added: “We’ve had some great feedback since we opened. We make everything from scratch.”
