The Hamilton Princess & Beach Club has unveiled a larger-than-life gingerbread house in its main lobby as part of its annual Gingerbread Display and Tree Lighting ceremony.

The annual festive project required several months of preparation and hundreds of kilograms of ingredients.

Designed to resemble a traditional Bermuda cottage, the structure was built using about 420 kg of gingerbread, 108 pounds of molasses and 200 kg of icing sugar, according to the hotel’s sugar chef JJ Hauser.

He said planning for the display began in August, followed by construction of the internal frame by the hotel’s carpenters in October.

The culinary team spent two and a half weeks baking the gingerbread panels, with at least one staff member working daily for a total of roughly 100 hours.

“Glueing, sticking and piping – all that fun stuff – takes time,” Hauser said, adding that this year’s design includes multiple rooms and an outdoor patio to make better use of the hotel’s open lobby space.

A chair on the patio will be used for Santa visits and guest photos.

Hauser, who was assisted by Alejandro Trujillo, Zah-Niyah Williams and Perla Sanchez, said the curved, shingle-style rooftop tiles were a new technique for the team and helped create a “Christmassy feel.”

He said the display has already generated excitement among guests.

“It’s the best way to kick off the festive season that I can think of,” Hauser added.
