Hamilton Princess Welcome New Executive Chef

The Hamilton Princess & Beach Club, a Fairmont-managed hotel, today [Aug 10] announces the appointment of Thomas Laberer as Executive Chef.

In this role, Chef Laberer will oversee 1609 Bar & Restaurant, Crown & Anchor, Marcus’, the Beach Club and catering throughout the hotel. Mr Laberer comes to Bermuda from South Africa where he was the Chef and Owner of The Original Deli, a modern Italian brasserie.

Chef Laberer is a highly experienced Executive Chef, serving in this position at various five-star hotels and resorts around the world. His most recent stint as Executive Chef was in June 2014 at the Anantara Resorts in the Maldives.

Prior to that, he served as Executive Chef at The Kempinski Hotel Beijing Lufthansa Center in Beijing; The Leela Kempinski Hotel Mumbai & The Leela Palace Hotel Bangalore in India; The Hilton Hotel Singapore; The Westin Grand Cape Town and The Table Bay Hotel, both in South Africa; and The Hilton Hotel Shanghai in China.

He started his career in 1988 as Chef de Partie fine dining and worked for four years in various Michelin-star restaurants in France, Italy, Switzerland and the UK.

Chef Laberer earned his Certified Master Chef’s degree at IHK Munich. He also completed a three-year apprenticeship at the Grand-Hotel Nuremberg [formerly The Rocco Forte Collection] and culinary training under the head chef at Aubergine Restaurant, a three Michelin-starred restaurant in Munich.

    good news as 1609′s food is just mmmmehhh especially for the price. I stopped going there but will try it again if the food improves. Don’t mind paying the prices but the food HAS to be good (and consistent). Marcus’ menu and venue is super cool but again I found the food good but not spectacular like the surroundings. expected more given all the hype TBH.
