Redemption Achieved After Cassava Pie Fiasco

Following a rather disastrous initial attempt at making a vegetarian version of cassava pie, Lorelei Logsdon returned to the kitchen this Christmas to try again, this time producing a far more appetizing creation.

The American resident is part Swedish and part Bermudian, and grew up in the United States eating her Bermudian grandmother’s cassava pie.

Her grandmother passed away in 1993, and some years later Ms Logsdon decided to try her hand at making cassava pie.

“Since I had never paid attention to how she did the magic she did year after year, I had no idea how to go about making this dish,” she said.

Armed with a copy of her grandmother’s recipe she set out to recreate the dish. Aiming to make a vegetarian version, she interchanging the chicken for vegetable protein and the end result was not as she had hoped.

In describing it, she said: “When I cut into it, new [unwanted] layers had formed, with the farina on the bottom, then a layer of watery egg in the middle, and then the burnt vegetarian chicken on top.”

In an article about her most recent culinary exploit, Ms Logsdon said, “It was never my intention to try this again.

“Without someone to guide me in the right direction, I knew any other attempts to make this recipe would end up the same way — as a disaster.

“However, my aunt went on a trip to Bermuda this past summer, and offered to bring me back some cassava farina.”

“I wrapped the farina as if it were a Fabergé egg preparing for a world tour, and then put it into a deep freeze,” continued Ms Logsdon.

Still using vegetarian meat-substitute, Ms Logsdon made a cassava pie for Thanksgiving and was pleased with how it came out.

“Once Christmas came around, I felt like an old pro at making Cassava Pie,” said Ms Logsdon.

“I repeated the same process I had followed at Thanksgiving and again had a delicious casserole, this time for Christmas dinner.”

    My mother and serveral Family members allways made both Cassava Pie with Meat and without Meat.
    My mother used a recipe that dates 5 generations.

    I have created a Diebetic Friendly,Low Fat,Veggan Cassava Pie that uses Egg Beaters,Slendor,and I Can’t It’s Not Butter and it came out nice.
    My Cousin used the recipe and She said it came out nice also.
